After a chat, a user always gets a transcript of dialogue on email even if he declined this.
I'm not sure on which side this issue is. If it's on our side, maybe someone has an idea how to fix that?

Sounds like you may have transcripts turned on as "public" in your chat settings. If that's the case, a trigger in your support instance is probably sending these to the customer. Switching this to "Private" should do the trick.
