How to use display_info field in Channel Framework

I can't find how to use the display_info field in the Channel Framework.
Are there default object_info types and data that can be used in the standard zendesk UI?
For example, can I use the object_info field to show a flag in a zendesk comment, as happens for Whatsapp messages?

Your example for WhatsApp is exactly how the display_info is meant to be used. It'll expose it to the UI and be thread on the ticket comment. You can see an example request that uses it here.
