I would like to include a field on tickets without adding it to the form. Specifically, related to the received-at reporting workaround, I'd like to use a custom field to provide this attribute. If I use a trigger to update that data point, but the field is not on the form, will it still be reportable in Explore?

Yes. ALL fields are on ALL forms. You just select which ones you see. If you do a search and check the check box next to the ticket number then select edit, you'll see all the ticket fields. They're there. We even update hidden fields via triggers for various purposes.
