How do I remove "title" from ticket field?

Unfortunately, it is not possible to remove title from the ticket field. The title shown to agents / end-users follows the ticket field text and this is hardcoded in the system. 
 
However, if you want to edit / remove the title in your Guide contact form (Submit a request). You're able to change this title text with a little bit of coding.
