SAML information not getting updated

We have SSO via ADFS and SAML 2.0 as login for our help center. Information about the user (phone number, name, surname, adress, job description, manager) get passed over this service.

However we found out that this information won't get updatet on zendesk side.

When a user left our company with the username "johndoe" his account got deleted after a certain period of time. Sometime later a user got the same username, which didn't pose a problem until the information of the old user popped up in zendesk. 

How do we prevent this from happen aka. how can I force zendesk to update this information?

If you add a field, it get's populated at next login, but already existing fields don't get checked?

To answer your question, we'll need to take a closer look at your current SSO configuration as well as focus on the users that weren't updated.
