Remove email header from emails received via email channel

We currently receive tickets via email and ticket is created and populated with the {{ticket.description}} tag.  Unfortunately this tag includes the email header of the system that sent the initial email (name and email) and we would like to know if this can be removed so that the generated ticket simply contains the body of the email sent.
