I'm very new to ZD :) I've looked around for an answer to my question and there doesn't seem to be one, so I want to double-check.
Is there a way, other than editing the source code, to add collapsible menus to my Help Center?
I have multiple articles per section and it looks really overwhelming without the articles collapsed.
Any help would be appreciated.

I can confirm, unfortunately, there is a no way to achieve that without a little coding. :/

Do you know if there are any plans in the near future to add such a feature? I don't mind messing with the code but would ultimately prefer not to.

This is not in the roadmap in the near-term future. That being said, my understanding is that the coding solution isn't too difficult to implement, and Vladan and some of our other moderators are great at helping people out with that.
