I assumed this would be very basic but I cannot seem to find the report. This would be helpful for staffing to know when we need more eyes on the queue. Is there a way to see average ticket time submission or something similar?

Hi there,
On the prebuilt "Zendesk Support" dashboard, you should see a breakdown of the hour of the day, and day of the week that tickets are created for the selected period. This should give you more details than an average would.
You could also create a heatmap to combine the hour of day and day of week, and see your hot-spots.
