when a user is associated with multiple organizations you cannot then go into the subsequent Organization field and start typing to find the Organization from that list, you have to expand that list and scroll or arrow down...
is this a setting?

This should not be the expected behavior. Our documentation indicates that a list of matching organizations appears as you type.
